I’ll admit it. I LOVE leftovers, mainly for the excuse of turning them into my leftover concoctions. I actually prefer dishes re-made into some sort of yummy leftover concoctions (usually involving cheese), than the first time round.
Was reminded of this last night, with the creation of a particularly yummy leftover casserole, so I felt inspired to share the secret to my success in both my family and myself loving what I do with leftovers.
It’s simple really, mix everything together and add a can of cream of mushroom soup and cheese (preferably a sharp cheddar).
So last night’s creation:
The Leftovers:
- sausage
- ham
- zucchini
- mashed turnips and potatoes (don’t make a face, they’re good)
- spinach
- beet greens
- mushrooms
- celery
- cream of mushroom soup
- grated cheddar cheese
- seasoning salt
- pepper
- Chop all the leftovers up and toss them into a big casserole dish.
- Chop and add any desired additions, like mushrooms and celery (which are favorites of mine).
- Empty a can of cream of mushroom soup over everything.
- Grate and add cheese, to taste (I think I usually add at least a cup).
- Add seasoning salt and pepper to taste.
- Mix everything up together.
- Bake it in an oven, pre-heated to 350 degrees C, for about 30-minutes or until bubbly at the edges.

- cooked rice

This does sound most enticing for an impromptu, informal meal. As you do, Emme, I also have a particular fondness for additional comestibles that were not consumed by the previous evening’s table guests. I cannot say that I have ever been so creative as you evidently are with combining various ingredients to create new dishes of delectable taste, but I do often take an element of one meal and add it to the course of another to create a new menu for a lunch or dinner. My possible favorite meal to have the following evening is lasagna, which is rather the Italian equivalent of a casserole in my opinion. Finally, cheese in many different flavors and varieties can instantly enliven and improve any dish, and your vegetable choices in this are commendable and approved.
